Super Bowl Sweet Potato Chips- A Healthy Alternative

Did you know that sweet potatoes are one of the fastest growing agricultural markets today?  One reason is that they are much healthier than other snack products on retail shelves.  As we prepare for the Super Bowl, here's a recipe for sweet potatoes that your party goers will love.

I love.sweet potatoes. I love sweet potato fries. Sweet potato hash browns. Sweet potato hash. Sweet potato cakes. Sweet potato brownies…WOW, that was a good idea. Doin’ it. They are pretty much the best starch of all time. And they go with everything. Chocolate. Cheese. Meat. Almond butter. Sweet potatoes are the perfect food. Don’t fight me on this. You’ll lose.

Since most of us are in love with chowing down on chips at parties, these are an epic alternative. And way more delicious. I’m serious. Homemade chips are just way better. You could make beet chips too!! Then serve it with Roasted Red Pepper dip. Duh.

So you know how when you’re at a super bowl party and have to make some uncomfortable conversation with random awkward person in the room….I love awkward those people. I’m pretty overbearing to most people, especially awkward people. If people are uncomfortable around me, I’m really REALLY good at making them even more uncomfortable. Even more uncomfortable than this guy on the left side at 0:11 and 0:17 seconds. Watch him in this commercial. Seriously do it. I keep watching seconds 0:10 through 0:20 and laugh by myself. Then Laura will chime in with laughter. I heart her. I want to hold this man and make him feel less scared of the cameras that are video taping him. He’s an awkward turtle. I love him. I can’t wait to hang out with him at my Super Bowl party. With cheesy bread. Ok, everything I just said was a complete lie.  I would crap myself if I ate that cheesy bread. It might be worth it though. Especially if I was being forced to watch the super bowl.

Superbowl Snacks: Sweet Potato Chips
Prep time:  10 mins Cook time:  20 mins Total time:  30 mins Serves: 4+

Ingredients
  • 4 sweet potatoes (try to grab skinny ones)
  • 2-3 tablespoons coconut oil
  • salt, to taste


Instructions
  1. Preheat your oven to 400 degrees.
  2. Use a mandoline or a knife to cut your sweet potatoes thin. I'd say the thickness of a silver dollar or maybe a little thicker.
  3. Put some parchment paper down on a cooking sheet.
  4. Place sweet potato rounds on the parchment paper.
  5. Melt coconut oil and use a pastry/cooking brush to paint some coconut oil on top of each sweet potato round.
  6. Sprinkle salt on top.
  7. Place in the oven to bake for around 8-10 minutes.
  8. Flip sweet potatoes over and bake for another 5 minutes or until edges are brown and have curled up a bit.
  9. Let cool. Serve with Roasted Red Pepper dip.
Notes If you make these chips too thick, they won't crisp up. Too thin, and they will burn pretty quickly. Just beware.

Bubble Wrap® Appreciation Day, first celebrated in 2001, is recognized on the last Monday in January each year. Polystyrene Banned in NYC and Growing

EPS Alternatives by SSI Packaging Group
EPS, expanded polystyrene packaging, will soon be banned in New York City.  NYC is one of many on a growing list of major U.S. cities that are changing how companies utilize alternative packaging materials.

Foam containers and packaging peanuts will banned beginning July 2015 in the city.  New York City Mayor Bill de Blasio made the announcement last Thursday.  Products made with EPS like packaging peanuts, foam cups, etc. are already banned in other cities across America including Washington, DC, Minneapolis, San Francisco, Oakland, Portland, Albany and Seattle.  This trend is expected to be adopted by other cities and localities over the next several years.

"By removing nearly 30,000 tons of expanded polystyrene waste from our landfills, streets and waterways, today's announcement is a major step towards our goal of a greener, greater New York City,” said Mayor Bill de Blasio.  He said that as these products are phased out, industry will shift it’s use from environmentally harmful products to more earth-friendly products.  This sort of shift will need to happen within the next few months in order to be prepared for the upcoming changes.

Use By Sell By Date Code
So how long can you store that leftover meatloaf anyway?  Have you ever opened a container from your refrigerator and sniffed it to see if it was still edible?  With the date codes printed on food items these days it's easier to know how long an item can be shelved in your kitchen, but once the item is opened or cooked the expiration date and use by date may not be as important as when the item was first cooked or exposed to air. 

The date codes on boxes, cans, and other packed foods are printed on the surface of the food packaging from high speed coding equipment such as the Matthews e-Mark C02 laser coding system, the e-Solarmark C02 system, and
Leibinger's Jet2Neo and Jet 3 inkjet systems are key elements to clear marking and coding solutions for food manufacturers and producers.
